Make Tuscan Tomato Soup Recipe At Home









Number of servings - 4

Ingredients:

Onions - 1 pc. (peeled and chopped)
Bell peppers - 2 pcs. (seeded and sliced into sticks)
Celery - 1 stalk (sliced)
Tomatoes - 3 cups (skinned, seeded and diced)
Olive oil - 2 tbsp
Beef broth - 3 cups
Eggs - 4 pcs.
Parmesan cheese - 4 tbsp (finely grated)
Ground black pepper
White bread - 8 slices (slightly roasted)

Directions:

Heat olive oil in a saucepan, fry onion until transparent. Add vegetables and simmer on low heat for 10 minutes.

Pour warm broth to the saucepan with vegetables, cover and simmer 15 minutes. Pepper to taste.

Remove soup from heat. Pour the mix of eggs and cheese to soup and stir.

Place bread into bowls and pour with soup. Garnish with greens to taste.


Ready in: 35 minutes.
